The first time I made this, it was much more complicated with far more ingredients. Finding myself without most of them yesterday left me hungry and looking for something easy to replace my standard morning fare. What better replacement than a new take on my typical breakfast cake…with coconut flour! It adds a certain crumbliness that wasn’t there last time along with a strong coconutty flavor!
Vegan 3-minute Strawberry Colada Cake
- 2 T. coconut flour
- 2 T. strawberry protein powder
- 1/4 t. baking powder
- 1/4 c. applesauce OR 1/8 t. guar gum + 1/4 c. water
→In a small bowl, whisk the dry ingredients.
Form a well in the center and pour in the water or applesauce.
Stir until it forms a thick paste that looks like this (you might need to add some more water):
Cover and microwave for 2 minutes on high power. Microwave another 30 seconds or so without cover. Let stand 1 minute (or don’t, I just felt like throwing it in there since all microwave directions seem to say that).
Top with some strawberries or shredded coconut.
