This used to be one of my favorite breakfasts before I went vegan. It’s quick, it’s simple and it involves almost no thinking whatsoever. Plus it gives me an excuse to eat more fruit! (Not that I ever need such an excuse).
Since spring seems to have (sort of) sprung (or one can only hope), it felt like the perfect time to veganize it! I don’t know why I never tried this version before! It’s so coconutty and has none of the Splenda-sweetened aftertaste the yogurt lent it.
God, I’m glad I went vegan.
The Best Breakfast Ever (a.k.a. The Fruity, Coconut Oatmeal)
- About a cup of old fashioned oats (NOT instant)
- Coconut Milk (Store-bought or learn how to make your own here)
- Fruit of choice (berries are perfect for this…or I might just really like berries)
- A small handful of cereal, optional (I found some puffed millet at Whole Foods that, surprisingly enough, seems to maintain its crunch even after a being wet for awhile)
→The night before, put the oatmeal in a bowl.
Add enough milk to make it the consistency of regular cooked oatmeal. Stir well.
Cover with a plate (or something else) and put in the fridge.
The next day, get out of bed and get dressed (I swear this is the hardest part of the process).
Take the oatmeal out of the fridge, add a handful of berries (or other fruit) and a handful of cereal (if you want).
Serving suggestion: Eat with a spoon.










Wonderful recipe, I like the idea of adding fruit and some cereal.
I have organic quick oats, I guess from your recipe its best to use regular oats instead of “quick”
