Before I get to the recipe, I want a take a second to mention my favorite holiday is coming up next week: Earth Day is next Monday, April 22nd, and I’ll be celebrating with a week of tips, tricks and suggestions to make your home (and your food, of course) more eco-friendly!
Now that the weather’s getting warmer, consider swapping your baking pans and stockpots for your food processor or slow cooker. Not only is raw food better for the environment, but it’s also better for you. (Check out some information on raw foodism here).
Not sure if you can do the raw thing all the way? That’s o.k. Just cutting back on the amount of cooking you do is much better for the environment (and the air conditioning bill!)
Looking for somewhere to start? Try these easy “popsicles”–only three ingredients and can easily be made 100% raw.
3-Ingredient Popsicles
- Coconut milk
- Bananas
- Almonds (I used Emerald’s Cocoa Roasted ones, which aren’t raw, but you can easily sub with raw almonds and cocoa powder)
→Mash the bananas really well. Add coconut milk until creamy.
Pour into small Popsicle molds or ice cube trays.
Add the almonds.
I decided to stick the almonds in as “handles” but, in hindsight, I would have been much better off grinding or breaking them into chunks and then folding those into the banana/coconut puree. Ah well, always next time!
Freeze until solid.
